The truck was travelling east towards Ballarat on the main arterial that links Adelaide with Melbourne when it rolled at about 5am, near Middle Creek.
The driver of the truck was transported to hospital suffering minor injuries.
Police are diverting traffic at the Pyrenees Highway and motorists are warned of delays as a result.
The fresh pork will be removed by hand meaning the stretch of Western Highway affected is expected to be closed for most of the day.
Drivers have been urged to use caution as wet weather changes conditions on our roads.
